Kumbalanga Moru curry

Moru curry or kalan  is a traditional kerala dish and it can be  prepared with Yam,raw plantain or wintermelon.This is a curry with no dal and it tastes good with brown rice.

Ingredients:

  1. Wintermelon - 250gms
  2. Green chilly - 3
  3. Grated coconut - 1/2 cup
  4. Curd (thick) - 1 cup
  5. Cumin seeds(jeera) - 1/4 tsp
  6. Red chilly powder - 1/4 tsp
  7. Turmeric powder - 1/2 tsp
  8. Mustard seeds- 1/4 tsp
  9. Dry red chilly - 2
  10. Fenugreek seeds (uluva) - 1/4 tsp
  11. Curry leaves
  12. Salt
  13. Oil

Preparation:

  1. Chop  wintermelon into medium pieces and cook with little turmeric powder,red chilly powder,salt and water.
  2. Grind grated coconut with jeera,curry leaves, green chilly to a fine paste.
  3. Add beaten curd to cooked  wintermelon and stir well to avoid curdling.
  4. Once it becomes thick in consistency add coconut paste to it and boil for 2-3 mins.Remove from fire.
  5. Heat oil in a  pan .splutter mustard seeds,dry chilly and fenugreek seeds and add it to the curry.
  6. Garnish with curry leaves.

Neychoru,Chicken Dofiyas and Semiya payasam

Its been more than an year since I started blogging…I couldn’t believe that this is  my 100th post and on this special occasion iam going to give you all  a special sweet n spicy  virtual  treat with ghee rice,chicken curry,raita and vermicelli payasam. I started this just for time pass and now  I got to know  more about cooking   . so I want to thank all my blogger friends  for your support and  Valuable comments.

Neychoru (Ghee Rice)

Ney choru is a traditional malabar Muslim dish and it tastes good with any non veg. curry ,papadam,pickle  and raita.

Ingredients:

  1. Basmati Rice - 2 cups
  2. Onion(Big,chopped) - 2
  3. Cashewnuts - 1 cup
  4. Raisins - 1/2 cup
  5. Ginger-garlic paste - 2 tbsp
  6. Cinnamon - 1
  7. Cloves -4
  8. Bayleaves - 2
  9. Pepper corns - 4
  10. cardamom - 2
  11. Coriander leaves
  12. Water - 4 cups
  13. Carrot (chopped) - 1/4 cup
  14. Salt
  15. Ghee - 5 tbsp

Preparation

  1. Soak rice in water  for half an hour.
  2. Heat ghee in a  pan and fry half of the chopped onions till golden brown and keep aside.
  3. In the remaining  ghee saute cinnamon,cloves,cardamom,peppercorns and  bay leaves,ginger-garlic paste,coriander leaves,chopped carrots and remaining chopped onions.
  4. Add  rice to it and fry for 3-4 mins till it becomes crispy.
  5. Now add 4 cups of boiled water to rice mix and cover and cook until all the water is absorbed.
  6. Garnish with fried cashews,raisins and onions.
  7. Serve hot with raita, chicken curry .

Chicken Dofiyas

This recipe is adapted from a cookery show. .. it tasted great with ghee rice.Enjoy!

Ingredients

  1. Chicken - 1kg
  2. Onion(medium, chopped) - 3
  3. Tomato(medium, cut into round pieces) - 1
  4. Ginger - 1" piece
  5. Dry red chilly - 2
  6. Garlic pods - 6
  7. Green chilly - 2
  8. Capsicum -1
  9. Kasoori methi powder - 1/2 tsp
  10. Turmeric powder - 1 1/2 tbsp
  11. Kashmiri chilly powder - 1 tbsp
  12. Garam Masala powder - 1 tsp
  13. Pepper powder - 1 tsp
  14. Coriander powder - 1 tsp
  15. Milk - 1/4 cup
  16. Cashewnut paste -1 tbsp
  17. Vegetable oil or Dalda
  18. Salt
  19. Ghee- 1 tsp
  20. Coriander leaves

Preparation:

  1. Marinate chicken with turmeric powder and salt.
  2. Heat Dalda in a pan.Saute chopped ginger,garlic and once it is done add green chilly,kasoori methi powder,dry red chilly,chopped onions,chopped capsicum and fry well.
  3. Add garam masala powder,pepper powder,coriander powder,turmeric powder,chilly powder and mix well.once raw smell goes add chicken pieces and mix well.
  4. Add milk and Cashewnut paste to it .cover and cook till chicken is well cooked.Add ghee to it and mix well.
  5. Garnish with  tomato  pieces and  coriander leaves.

 

Raita

Ingredients:

  1. Onions - 2
  2. Carrot -2
  3. Coriander leaves
  4. Yogurt - 1 cup
  5. Salt

Preparation

Mix well chopped onions,grated carrots ,coriander leaves,salt and yogurt.Raita is ready to serve.

Semiya payasam

Ingredients:

 

  1. Vermicelli(Semiya) - 1 cup
  2. Cashew nuts - 10-12
  3. Raisins - 10
  4. Water
  5. Sugar - 1  cup
  6. Milk - 4  cups
  7. Ghee
  8. cardamom powder - a pinch

Preparation:

  1. Heat  ghee in a pan  and fry cashewnuts and raisins and keep aside.
  2. In the same ghee, fry the vermicelli till light brown
  3. Boil milk with water and stir continuously. once it starts boiling , Add  vermicelli to it  and mix well.
  4. Once it  becomes soft , add  sugar to it  and stir  till it becomes thick.
  5. Garnish with fried  cashew nuts,  raisins and cardamom powder.
  6. serve hot or cold.

 

Pazham pori (plaintain fritters)

This has been my all favourite and it is  a popular tea time snack of kerala.

Ingredients:

  1. Refined Flour(Maida)-2 cup
  2. Ripe plaintain(nenthrapazham)- 2 
  3. Sugar - 2 tbsp
  4. Salt-one pinch
  5. Water
  6. Coconut Oil
  7. Yellow color or turmeric powder  -one pinch

 

Method

  1. Peel banana and cut them into 2 halves.Then slit into 4 pieces.
  2. Make a batter with maida,salt sugar,turmeric powder by adding water gradually to form a thick consistency.
  3. Heat oil in a pan.when oil is hot,dip each banana pieces in the batter  and drop into oil.
  4. Deep fry till both sides are golden in color.
  5. Serve with hot tea.

Soya Chunks Fry

 

Soy  chunks contains  70% of protein and soy can be considered as an alternative to milk,egg and meat..  In this recipe i used Half a cup of soy chunks and it contains 15gms of protein..This is quick and easy to make.

Ingredients:
  1. Soy chunks-1/2 cup
  2. Onion(big)-1
  3. Ginger-garlic paste-2tbsp
  4. Tomato(cut into small pieces)-2
  5. Turmeric powder-1/4 tsp
  6. Kashmiri chilly powder-1/2 tsp
  7. Garam masala powder-1/2 tsp
  8. Coriander powder-1/2 tsp
  9. salt
  10. Coriander leaves
Preparation:
  1. Soak soy chunks in water for 15 mins and squeeze the water out.
  2. Pressure cook with salt and little turmeric powder for 1 whistle.
  3. Heat oil in a pan.Saute onion(cut into small pieces) till light brown.
  4. Add ginger-garlic paste together with all powders and stir for 2-3 mins.
  5. Add chopped tomato  and fry for sometime.
  6. Add soy chunks to it and fry till gets dry.
  7. Garnish with Coriander leaves.

Capsicum(Bell Pepper) Bhaji

Usually I make bhaji with onions. This time i tried with the bell peppers. This  is quick and easy to make and iam sure you all will enjoy this spicy snack .

Ingredients:

  1. Capsicum(big) - 4
  2. Besan(chick pea flour) - 1 cup
  3. Baking powder - 1/4 tsp
  4. Red chilly powder - 1 tsp
  5. Coriander powder - 1/2 tsp
  6. Jeera powder - 1/4 tsp
  7. Garam Masala powder - 1/4 tsp
  8. Ginger-garlic paste - 1 tsp
  9. Lime juice - 1 tsp

 

Preparation

  1. Cut capsicum into medium pieces and mix with salt and keep aside.
  2. Mix besan,baking powder,salt,red chilly pdr,coriander pdr,jeera pdr,garam masala pdr,ginger garlic-paste,lime juice and sufficient amount of water to make a thick batter.
  3. Heat oil in a pan.when it is hot, dip each capsicum pieces in the batter and deep fry till golden brown.
  4. Serve with ketchup or chilly sauce.

Kadala Curry

This  is a traditional curry of kerala..For Puttu, kadala curry is a must .This curry also goes well with appam,Chappathis….Enjoy!

Ingredients:

  1. Black  chick peas(kadala) - 1 cup
  2. Green chilly - 2
  3. Turmeric powder - 1/2 tsp
  4. Coriander seeds - 2 tsp
  5. Grated coconut - 1/2 cup
  6. Shallots - 5
  7. Garlic - 2
  8. Ginger - a small piece
  9. Cloves - 2
  10. Bayleaves
  11. Cinnamon stick -2
  12. Fennel seeds - 1/4 tsp
  13. Mustard seeds -1/4 tsp
  14. Dry red chilly - 2
  15. Salt
  16. Coconut oil
  17. Curry leaves

Preparation:

  1. Soak kadala overnight. Pressure cook with little turmeric powder, green chilly(cut into lengthwise) salt and keep aside.
  2. Heat oil in a  pan.Fry grated coconut,coriander seeds, shallots, clove,cinnamon,bayleaves,fennel seeds,ginger,garlic till light brown in color.once it is cool, grind it into a fine paste.
  3. Add the coconut paste to kadala mix and boil.
  4. Heat oil in a pan . Splutter mustard seeds, dry red chilly and add the seasoning to the curry.
  5. Garnish with curry leaves.

Brinjal Fry (Vazhuthananga Varuthathu)

This is an easy and quick recipe.It goes well with rice as side dish.

Ingredients:

  1. Eggplant (big,cut into round pieces) - 2
  2. Chilly powder - 1 tbsp
  3. Turmeric powder -1 tsp
  4. Rice flour - 1/2 tsp
  5. Salt
  6. Coconut oil

Preparation:

  1. Mix well chilly powder,turmeric powder,rice flour,salt without adding water.
  2. Marinate the eggplant pieces with the mix and keep aside for 1 hr.
  3. Heat oil in a pan. Shallow fry till both sides are brown in color.

Manga(Mango) Chammanthi

Ingredients:

  1. Raw Mango - 1
  2. Shallots - 8
  3. Dry red chilly - 3
  4. Salt
  5. Coconut oil - 1 tsp

Preparation:

  1. Cut mango into small pieces.
  2. Grind together mango,shallots,dry red chilly and salt into a paste.
  3. Add coconut oil to it and mix well
  4. Serve with rice or kanji.

Chicken is my daughter’s favourite  and once in a while i prepare  some variety of chicken dish.Normally she likes non-spicy food,but when it comes to chicken she wanted it more spicy.hope you all will enjoy this yummy chicken fry..

Ingredients:

  1. Chicken Drumsticks - 1/2 kg
  2. Tandoori chicken masala - 2 tsp
  3. Ginger-garlic paste - 2 tsp
  4. Curd - 4 tsp
  5. Kashmiri chilly powder - 1tsp
  6. Lime juice - 2tsp
  7. Pudina  leaves - 1 tbsp
  8. Salt
  9. Food color (optional) 1 pinch
  10. coconut oil

 

Preparation:

  1. Using a Knife,Make fine slits on chicken drumsticks.
  2. Make a paste with the ingredients  numbered 2 to 9 and marinate the chicken with the masala paste.Keep aside for atleast 6 hrs.
  3. Heat oil in a frying pan.Fry till both sides are deep brown in color.

Coconut Chapathi

 

when sri announced rotimela i was thinking of making something unique.so  i ended up making coconut chapathi. This is so simple and easy to make and it tastes good  with any veg. curry.hope you all will enjoy it.

Ingredients:

  1. Grated Coconut - 1 cup
  2. Sambhar powder - 2 tsp
  3. Wheat flour(atta) - 2 1/2 cup
  4. Salt
  5. Ghee
  6. Coriander leaves(chopped) - 2tbsp
  7. Warm Water

Preparation:

  1. Mix  wheat flour ,grated coconut ,sambhar powder, chopped coriander leaves,salt ,required amount of water and Knead it to a soft dough.keep covered with a damp cloth for about 30 mins.
  2. Make balls out of the dough.Roll out into  flat round shapes using chappathi roller.
  3. Heat tava on medium heat. place the chappathi on the tava and when small bubbles appear turn over.cook until both sides are golden brown.
  4. Remove from pan and brush up both sides with little ghee.
